Might any of you know why they are destroyable and what the relevance they have to the fight with Typhon?

Well, its a relatively little known thing. But, Typhon's skills actually come from the various statues.
For the most part, I have found destroying Typhon himself to be much better than trying to take down the statues while hes attacking. But if you're having trouble with Typhon, you could always try this tactic.

Typhon will gain special power if he hit any of those statues. For example, if he hit Hades, he will gain the Life Leech skill, suck your life and replenish his.
Apollo or Demeter for the Meteor Shower or Summon LichKing skills, not too sure.
It is not necessary to destroy those statues, as long as you can prevent Typhon from hitting them. Hope this help :)

If he hits the life leech one, you might have to destroy it. He could stay alive forever with that thing. I've only had to destroy 2 statues in all my runs though.

Each of the statues grants Typhon a power for a limited time (so no, they don't last forever, he reverts back to his flame breath/melee combo soon afterwards (probably around 10-20 seconds) unless he hits another statue with one of his other powers).
Hades - Abyssal Liche Summons, Life Suction
Demeter - Thorns, Ranged Poison Attack, Stone Hand (comes up and grabs you and holds you, disabling movement and attacking)
Zeus - Ranged Thunder Attack
Apollo - Meteors, Energy Suction
I dont think he needs to hit the statues to get the powers, i think is more of a AI issue, on my runs i've found that most of the times he would just run around trying to hit me in melee barely using his fire-breath power, but sometimes as soon as i arrive, he sucks my energy, cast meteors on me, summon the liches and do the thunder attack without ever touching any statue and without me damaging them either.

Typhon usually dies in a matter of seconds. I haven't seen him live long enough to make use of more than 1 statue.

It is not necessary to destroy those statues, as long as you can prevent Typhon from hitting them. Hope this help :)
He doesn't have to hit them. It's a proximity thing. He absorbs their power and then uses it on you.

Actually I think he does have to hit them. Or maybe it also works if you hit them and not he. But it's definitely not just a proximity thing. If I make his opening firebreath go between Apollo and Hades he doesn't use any special attacks. If he hits Hades he will get Hades powers, if he hits Apollo he gets those. This happens every time he hits one of those statues with his opening breath, so I really doubt it has only to do with proximity.

I'd just like to think that after running Typhon a large amount of times (100+), it wouldn't just be a coincidence that he never used any powers unless I let him hit a statue with his flame breath. Perhaps his AI is programmed to react differently to different character classes or something, because it seems to work this way for my Avenger and Corsair.
Also, since the profile is easily changable and you (the above poster) don't have any special tag by your name, I'm really inclined not to believe you (the above poster). I can put that I was a tester for TQ in my profile as well. ;) Perhaps you can ask them to give you a tag since you were supposedly a tester, it would make people more inclined to believe you.
Edit: After looking at some of your posts, you may know what you're talking about. You'll forgive me if I'd rather somebody with a tag explain the ways. (not that the devs don't have better things to do)

I thought he just use them whenever, He chased be out of the circle area near one of my shrines and he used almost all the skills.I think he doesn't have to touch them.

I can't test it, I don't own TQ. But I did spend many months testing it and reading the IMPLEMENTATION DOCUMENTS.
Starlightgamer14 you're cool peeps. Even though you come across as a smart aleck. And I don't have a tag because I'm not important. Especially, since I don't work for THQ anymore. A word to the wise, if you like video games DON'T become a TESTER!

What is this supposed to mean?
BTW, despite trying very hard to get Typhon to use the statue powers through proximity, I have only been able to get him to use them after a statue is harmed. I welcome anyone to do repeated testing and prove this is not the case, but after many many Typhon runs with close observation of the statues I have been unable to get the powers to trigger without damage.

There seems to be two sides to the argument here, the people whose Typhon uses any of the statue's powers at will and the people whose Typhon uses the statue's powers only if he hits them. Perhaps there's some kind of trigger for the behaviour, because every time I go through the game again, I more or less play it the same (referring to doing side quests and those kinds of things), which would explain why mine always acts the same.
Perhaps there's a correlation between your actions when you start fighting him. I never run straight towards him. Instead, I usually run towards the battle marker while making sure he doesn't hit the hades statue with his fire breath. Then I run to the frostbite shrine. Then I run back to between the hades and demeter statue. Then I run to attack Typhon, making sure to dodge any fire breath attack he was preparing to hit me with when I get back down there.
Well, I really don't know, just throwing out speculations.
Actually, I wish mine used the powers whenever he wanted to, because as he is right now, he's pretty much cannon fodder, at least for my Avenger. He seems to be more balanced for somebody that can't dodge every single attack he throws at you (IE: my corsair). Although, there are times when he just wanders around the battlefield like he's got ADD, but only stops to attack once like every 20 seconds, and only with his fire breath.

Haha, so true. It would probably be frustrating as hell being a tester for a game, and I don't deal that well with frustration, especially the frustration that comes from dying a lot. I attempted to be a beta tester for "Dungeon Runners", but I don't know whatever happened to that. Perhaps it saved me a lot of frustration though.

Anyway, this whole argument is a bit frivolous. So, I would like to end it. From what I have READ, IT IS PROXIMITY. And there is also supposed to be an animation that accompanies it. Typhon will look like he's taking a deep breathe and then, an electric like bolt traverses from the statue's flame towards Typhons chest (it looks like the Liche King's regular attack but, is the color of the flame that the statue is holding).
So, if Iron Lore has changed this matter then, let it be so. Otherwise, ask a Moderator that would have access to this information.
Edit: I don't want to argue about this subject anymore. Just kill it.

I have never seen some flashing bolt in any color while fighting Typhon. Would be good though. If it was taken out it should definitely be added again.

I've actually had him meteor me as soon as I saw him... or rather I think he saw me, I was rather zoomed in at that time...
