I've enjoyed most of the rogue builds I've tried :). My first character was a brigand, and he is still my primary loot farmer. Assassin plays pretty similarly to brigand-- both are good physical combatants if you haven't tried that route yet. Brigand and assassin are both "the best defense is a good offense" types, and rely on the confusing effects of poison to give them the edge in killing packs of mobs fast enough to survive.
The rogue builds that seem closest to the flavor of the typical fantasy rogue for me are corsair and dreamkiller though. I mapped throwing knives onto the middle mouse button with both classes, and have been enjoying the feel of both classes a great deal in spite of their differences ;).

Melee/Trapper/Knifer Warlock has been the most fun Rogue build I've played, bow Brigand the most efficient.

does throwing knives have any effect in legendary?

I'm at Helos Legendary right now, but am not playing the toon atm. I'm going for a specialist build that uses ...of Smiting jewelry socketed with Monkey King's Trickery and then spreads the -% health reduction via Knives and Necrosis. Finding good dual affix ...of Smiting rings/ammies is proving tough. I'll report on it as I go.
I haven't had to use Knives up to now. Traps slaughter everything up to the end of Epic. It's a shockingly fun build to play, though. I use Traps and Liche King to draw aggro, then sneak up on tough monsters who haven't died to the Traps and Lethal Strike them. Warlock is quite fragile as melee toons go, so you have to play with good tactical positioning and combat techniques. It's not a "rush in and hold down the LMB on mobs" type of build like Conq or Templar.

and if i try assassin, which class should i pick 1st?

Either is viable. Rogue + Bow + maxed Envenom Weapon = easy passage through Act I. Warfare is also pretty good at the start, although Nessus, Polyphemus and Arachne are a lot tougher melee than with bow. Or go Rogue + Traps. It doesn't start as quickly as bow & EW, but it really carves through everything once you get Rogue maxed and start investing in the skill that makes Traps send out extra bolts. If you happen to put a few points into Battle Standard along the way...

Have you tried browsing the Warfare and Rogue forums? I found this (http://www.titanquest.net/tq-forum/threads/16225-Assassin-Build) on the second page of the Warfare forum, along with another thread on building a better Assassin. I'm pretty sure the Rogue forum will have similar threads. There's also a link to a Trapper Assassin guide in Violos' sig.
Edit: I just checked the Rogue forum, and 6 threads on the first page deal with various aspects of Assassins.

Fighter Templar Build: http://www.titancalc.com/TitanCalc.asp?mastery=Templar&master1=5&master2=9&sa=21&m1=32-0-12-0-6-0-12-7-0-0-6-0-6-0-0-0-6-0-12-8-0-0&m2=32-8-12-0-12-8-12-6-0-8-8-0-0-0-0-12-6-0-0-0-12-0-00 (the one i am using now)
that's what i use(lvl 75 Templar)and i am a fighter style templar and it's really good for monster/boss hunting(i use mace+shield or sword+shield , etc)
there are mage templars too. (staff and they attack with dream mastery's skills instead) read below.
you choose if you want to use trance of empathy or wrath , empathy is better for boss killing in my opinion , since skill disruption fails 100% on bosses like typhon , he uses his skills normally. And the same for hades and other bosses.. wrath is good if the monsters u kill are easy and all u need is a bit highier damage... I use Battle Awareness/Trance of empathy , then colossus form and i attack the boss , i use rally to heal myself , and i can solo typhon without running (except when he uses the falling comets skill , i have to move a little cause the damage is high) you need good equipment though... Templar in my opinion is the best for both PvP and PvE , if you know how to use him..! some ppl believe trance of wrath is better >.>
Some people got Templars with Intelligence Build instead , and they use magic robes and staves that give -% Recharge , like the amulet "polaris" , the helmet "Tiresias' Guide" the Robe "Cestus" the Artifact "Talisman of the Jade Emperor" etc. All they do is: they level up to 75 , they search in every server for this equipment , when they get it , their skills never recharge. (No Skill Reuse) they spam skills!:D rally heals for like 2.000 health or something , they use it again and again , they never die and they got good damage. but the problem here is , you can't freeze bosses like typhon or hades... but you still can kill them by using rally again and again , 2k health per use... the only hard for you will be levelling up without the skill recharge items... (as a mage)
This Build is good for a mage templar i think: http://www.titancalc.com/TitanCalc.asp?mastery=Templar&master1=5&master2=9&sa=21&m1=32-0-12-0-6-0-12-8-0-0-0-0-6-0-0-0-6-0-12-8-0-0&m2=32-8-0-12-12-8-0-6-0-0-0-8-0-0-0-12-6-12-0-0-12-0
Remember guys , TitanCalc's Skill Points Number is based on a character lvl 70. the max is 75 so you can get more points than that...! Skill points aren't really a problem in this game.. we get enough skill points to purchase all the needed skills. We Just Need Better Equips Q_Q Since there is a random number generator for the item's stats , u gotta find many pieces of the same item till u get a really good one... :/
Defense+Hunting / Defense+Rogue are also good , but dream is pretty much overpowered!
I've tried PvP with every other class combination , dream beats all , just a sands of sleep skill from away , then u go close and use distortion wave and then he is freezed and u hit him D: every class dies like that , except templar. Templar has damage reflection , if he uses trance of empathy and rally , he reflects back to me like 150% of the damage i deal to him , so i am the one who dies if i atk , and the noobish is that frozen people still can use Potions Pffff lol... last time i was pvping a guy was using all the time freezing blast (storm mastery) to kill me but his dmg was too low cause when he freezes me i absorb a large amout of damage.. divine potions heal me faster , he got bored , he called me a cheater , then banned me lmao.

No shield passives on that build while using a shield? Pulverize is a must imo. Max that and at least one point in other shield passives. Distort reality and collossus form will do okay at 1 point I believe.

Has a uber power attack but has a low defense..
