I was looking at heat shield - not only does it say XXX amount of damage absorbed, but it also says "15% damage resistance". Is this resistance to everything? It sounds like (at least) a 1-pointer for sure, in that case.

What it means by not additive is if you 15% and 10% its not 25%. It works like 1000 * ( 1 - 0.15 ) * ( 1 - 0.10 ) = 1000 * 0.85 * 0.9 = 850 * 0.9 = 765 damage is taken. Meaning 1000 - 765 = 235 damage is resist. So instead of having 25% Damage Resist, you had 23.5% Damage Resist. Thats what "not additive" means for Damage Resist. And yes, enemies in Legendary can do upwards of 1000 Physical damage. Hence I do believe in the use of several Damage Resist items. Been doing this for a long time actually.
